Linguine Pomodoro Basilico

After a long day, working, running around, dealing with the everyday little things most probably no one wants to spend three hours cooking dinner. Even if, like me, you love being in the kitchen and take pleasure in preparing something delicious for your loved ones, sometimes you just don't feel like it.

Lucky for you, and me, there are many simple, easy to make meals that we can put together in a blink of an eye, that are simply delicious. Sometimes, simple is good. Even excellent! The only problem with those, are that more often than not, you can't think of any recipe that fits this description when you need it the most.

Also, many times, I just put together something with whatever my fridge has to offer, creating quick, tasty meals, without even knowing. But because I never write anything down I tend to forget whatever it is I made, and it's hard to reproduce later on. Until now, that is. I have recently taken up the habit of scribbling down whatever it is that I cook, even if it's not great. It enables me to work from there later on. Much easier than starting from scratch every time!

This new habit of mine has allowed to me create many recipes that I can recreate any time I want, and that I can also share with you, here on my blog. I enjoy this enormously. It makes me happy. It also makes my brain very active, always trying to think of new combinations, to come up with different things I can try out in the kitchen. Kind of a win-win situation that I've got going on here!

What is it that one always has in the pantry? The answer is pasta. Actually pasta is a life savior for many, me included. In more than one occasion it has saved us from not having dinner at all! What would we do without Italian food I wonder? We would be lost. For sure!

This pasta dish is so easy to make, and so tasty, and delicious, you won't believe it. And it only has like four ingredients. Yes. Four. Wow. I know. It is kind of perfect. And you can make it in 20 minutes. I personally enjoy making it, but most off all I love eating it! And it has never failed me. Never. I’ve made many very happy with my "Linguine Pomodoro Basilico". And now you will make someone else happy too!

Linguine Pomodoro Basilico

  • Linguine or Spaghetti 500 g
  • Coarse Salt
  • Garlic Cloves 5
  • Cherry Tomatoes 700 g
  • Basil Leaves 15
  • Olive Oil 2 tbsp
  • Parmesan Cheese
  • Salt
  • Pepper


  • 1. Half seed the cherry tomatoes. Strain the seeds and keep the liquid.
  • 2. Fill a big pot with water, add a pinch or two of coarse salt and bring to boil.
  • 3. At the same time, pour the olive oil onto a pot and add the garlic cloves. Once the olive oil is hot, add the cherry tomatoes, and let cook over medium-high heat, stirring from time to time.
  • 4. Once the water has come to a boil drop in the pasta and cook until "al dente". Not overcooking the pasta is very, very important! If you are not sure when your pasta is "al dente", you can use a timer. Cook it for 1 minute less that what's indicated on the package of your pasta.
  • 5. Remove the garlic cloves from the sauce. If necessary add a little of the tomato juice/liquid you reserved earlier.
  • 6. Season to taste with salt and pepper.
  • 7. Slice the basil as thinly as possible.
  • 8. Once the pasta is cooked, strain and keep some of the water.
  • 9. Transfer onto the pot with the cherry tomatoes, add 3 tablespoons of the water you cooked your pasta in, and mix everything together over medium heat.
  • 10. Sprinkle with the sliced basil and the grated Parmesan and serve immediately.
  • 11. Tip: I would avoid the grated Parmesan available at the supermarket. If you can freshly grate it yourself, it absolutely changes its flavor! You’ll see.
